Want to surprise the mom in your life with an amazing breakfast in bed? If you’re in need of inspiration – or guidance – look no further. We’ve compiled a list of seven delicious breakfasts that are very simple to make. You don’t need to be a chef to make these tasty treats look beautiful on the plate, either.
Here are some easy recipes and no-brainer presentation tips.
This breakfast is all about ingredients that are fresh and colorful. Just slice and place, and voila, it looks fancy.
• 2 cups plain or vanilla yogurt
• 1 kiwi
• 15-20 blackberries
• 10 strawberries
• 1 banana
• 1 tbsp chia seeds
Carefully spoon the yogurt into a bowl. If you get a little bit on the sides of the bowl, wipe it off with a paper towel. Peel and slice the kiwi and the banana crosswise. Trim the green tops off of the strawberries and slice them lengthwise. Pour the chia seeds into your hand then carefully sprinkle them in a strip. Arrange the kiwi, blackberries, banana, and strawberries in strips along the top of the yogurt, on either side of the seeds.
• 1 1/2 cups all-purpose flour
• 3 1/2 tsp baking powder
• 1 tsp salt
• 1 tbsp white sugar
• 1 1/4 cups milk
• 1 egg
• 3 tbsp melted butter
• 1 cup blackberries and raspberries
• 1/4 cup chopped walnuts
• 1 tsp powdered sugar
In a large bowl, slowly shake in the flour, baking powder, salt and sugar so that everything is evenly distributed. Melt the butter in the microwave. Beat the egg in a small bowl with a fork. Make a little hole in the mixture in the large bowl and then pour in the butter and the egg. Mix everything together so it’s smooth.
Oil a frying pan and heat it for 2 minutes on medium high heat. Use a 1/4 cup measuring cup to scoop out batter and pour it onto the pan. Cook until brown on each side. Serve with a light dusting of powdered sugar and berry garnish.
Avocado egg salad on toast
• 1 medium avocado, pitted and peeled
• 2 tbs mayonnaise
• 1 1/2 teaspoons lemon juice
• 4 eggs
• 1 celery stalk
• 1 tbsp chopped parsley
• Salt and ground black pepper, to taste
• 1 radish
• 2 slices whole wheat bread
Hardboil the eggs by covering the eggs in a saucepan with cold water, so they are completely submerged. Bring to a boil, then remove from heat and cover. Let stand 10 minutes then submerge in ice water. Peel the eggs and chop. Finely chop the celery and parsley and add to eggs, mix with mayonnaise. Add salt and pepper to taste.
Peel and pit the avocado. Slice into cubes and drizzle with lemon juice. Then scoop onto toast and mash gently with the back of a fork on top of toast. Spoon the egg salad so it’s layered on top of the avocado. Garnish with radish slices for color.
Egg and prosciutto sandwich on a bagel
• 1 whole wheat bagel
• 1 egg
• 1 slice parmigiano reggiano cheese
• 1 cup arugula
• 1 tsp lemon juice
• 1 tsp olive oil
Toast bagel and layer prosciutto and cheese slices. Toss arugula with lemon juice and olive oil. Then fry egg and quickly slide into sandwich. Serve hot.
Let’s say you’re extremely cooking challenged. Have no fear, this is one breakfast you absolutely can’t ruin. Just make sure to spring for the fanciest pastries you can find and prepare whatever fruit looks most appealing at the supermarket. Add in some fresh-squeezed orange juice, and it’s a breakfast that can’t lose.
